There are a variety of flours on the market shelves today, so why do we always run for all-purpose flour? Teff flour is one of the alternatives and is a great choice to substitute in place of wheat flour. Anytime I see "Nutritional Powerhouse" on the label of a product I want to find a way to use it!
Teff flour is an ancient grain and native to Ethiopia. The word "teff" is derived from the Amharic word "teffa", which means lost. It's a tiny grain but this tiny grain is packed with nutrition. It contains all 8 amino acids, which are the building blocks for the human body. One cup of teff flour contains 40% of the daily-recommended amount of calcium and teff has twice as much iron as wheat and barley. It's also high in protein and fiber and has no sugar content. Also, teff is a great alternative for people with gluten intolerance.
Muffins and pancakes are easy recipes to make for children. You can easily double recipes and freeze the leftovers. Muffins would be great additions to school lunches and even better with this added nutrition. Next time you are baking try substituting teff flour for a quarter of the all-purpose flour in your recipes.
Chocolate - Banana Muffins, makes 12 muffins
1 cup all-purpose flour (or you could use quinoa flour for gluten free)
1 cup of teff flour
¾ baking soda
½ tsp salt
2 tsp. cinnamon
6 tbsp. dark cocoa powder
½ cup brown sugar
½ cup sugar
2 large eggs
1 tsp. vanilla extract
¼ cup vanilla yogurt (use coconut yogurt for gluten free, or greek yogurt for higher protein)
6 tbsp butter, melted
3 over-ripened bananas
½ cup dark chocolate chips
½ cup walnuts, optional
Preheat oven to 350 degrees
Whisk together flour, baking soda, salt, cinnamon, and cocoa powder breaking up and large clumps.
With an electric mixer, beat the eggs and then add vanilla extract, yogurt, and butter. Once they are mixed well add the bananas.
Then slowly mix in dry ingredients until well mixed being careful not to over mix.
Fold in chocolate chips and walnuts.
Spray muffin pan with non-stick spray and fill ¾ the way full.
Bake for 20 minutes.
